In my post about Gigapan I mentioned the Gigapan Stitcher. It's good only in conjunction with Gigapan.
But that reminded me of something very useful, Hugin, which is now stable. It has served Jason and myself very well for some time already.

Yes, though already mentioned, I'll reaffirm that hugin is a pretty robust bit of software now and can do some fantastic things for stitching photos together.
You should try ICE. Easier to use than Hugin (at least for simple jobs): http://research.microsoft.com/en-us/um/redmond/groups/ivm/ICE/
